Despite its name (genovese meaning from Genoa) this is an ancient very traditional Neapolitan recipe. Made with beef and onions, it’s very slowly cooked patiently for hours, even days, till meet and vegetables become one and nearly sweet, like in a jam. Serve with copious amount of finely grated strong cheese like pecorino. Use ziti, or long maccheroni, penne, elicoidali tortiglioni. Also excellent with baked potatoes or rice.
